This pakoda / fritters is prepared with very healthy greens – palak / spinach. Palak is full of health benefits. Common recipe in which it is used is dal preparation.
Ingredientsand :
Palak/ spinach – chopped fine 100 gms,
Besan – 250 gms,
Rice flour – 50 gms,
Salt,
Green chilli – 6 to7, chopped fine,
Onion – 2 medium,sliced fine,
Grated ginger – 1 tsp,
Red chilli powder – 1/4 tsp ( you can increase the no.of chilli in place of chill powder ),
Chopped curry leaves – 1 tablesp,
Chopped coriander leaves – 1 tablesp,
Course powder of 3 cloves, 1/2″ cinnamon,
Peeled and crushed garlic – 5,
Ajwain – 2 big pinch,
Jeera – 2 big pinch,
Oil to deep fry,
Method:
1).In a mixing bowl put salt,onion, chilli, ginger, chilli powder, curry leaves, coriander leaves,jeera, garlic, ajwain, cloves powder and mix gently with clean hand so that onion releases moisture. Add 1 tablesp of hot oil, chopped palak and mix again.
2). Add besan and rice flours and mix very well so that all the ingredients are blended well. Now sprinkle little water and make a tight dough.
3).Drop small portions into oil (moving ) using fingers and fry under medium flame till they turn crispy and light golden in colour.Remove them on to a plate with kitchen tissue to absorb excess oil if any.
4).Prepare all pakoda using the entire dough.
5).Enjoy these very crispy, healthy snack along with tea.
Tip:
You can keep them in fridge for 2 to 3 days in an air tight container.
