Mango jam with mango ( fallen from trees)

Sometimes we get mangos which are not raw or ripened fully.Usually these are fruits that might have fallen from trees because of heavy rains and winds. They are neither sweet nor very sour. If we get these type of fruits you need not throw them away.You can prepare delicious jam with them and serve as spread for breads and rotis.
Ingredients:
Mangos – 3 to 4 approximately 1/2 kg,
Sugar/ jaggery – 125gms,
Desi ghee – 2 tsp,
Citric acid – 1/8 tsp,( optional ),
Method:
1).Wash, peel and cut mango into 1/2 pieces.
2l.Put them in cooker ( preferably 3 litres cooker ) along with sugar or jaggery, 2 tsp of ghee, citric acid and 2 tablesp of water.
3).Pressure cook the mango for 2 whistles.When cooker cools down,open it and stir the contents well.If necessary use potato masher to mash the contents..If it is too watery, allow it to cook for few more minutes,till the contents become a mass with glistening ghee by the sides.
4).Allow the jam to cool and preserve it in a clean air tight bottle.
Tip:
Quantity of sugar or jaggery depends on sweet Ness of fruit and also invidual choice.
