Delicious Halwa with white marrow of water melon

After consuming water melon we usually through away the thick rind of it. But it has got many health benefits like- rich in fibre, controlling blood pressure and immunity booster etc. It can be used to prepare no.of interesting recipes. Every body knows that lovely tutti frutti can be prepared from the white portion of the rind.Here iam giving a delicious dessert – halwa using the white rind /marrow portion.
Ingredients:
Grated white marrow portion (carefully peel out green layer ) – 2 cups, heaped ( after partially squeezing out the water ),
Sugar – 1 cup,
Elachi powder – 1/2 Tsp,
Food colour – optional,
Milk powder – 3 Tablesp,
Desi ghee – 3 Tablesp,
Milk – 150 ml.
Almond slivers, cashew nut bits and raisins – each 2 Tsp,
Method:
1).Heat a tsp. Of ghee in a thick bottomed pan. Fry the dry fruits along with raisins and remove. Add another 2 tablesp.of ghee in the same pan, add finely grated marrow and fry for 3 to 4 minutes till the moisture disappears and raw smell goes. Add 150 ml of milk and continue cooking,stirring continuously till the marrow becomes soft and translucent.
2).Add sugar,elachi powder and milk powder.Stir well and cook till the mass becomes little sticky and halwa like.
3).Add the remaining ghee, mix and cook for few seconds. Remove from flame and garnish with fried nuts and raisins.
Tip:
a).It may take more time to cook grated marrow as it is rich in fibre content.
