Wheat flour dosa ( my mother’s recipe)

Dosa with wheat flour is always preferable to dosa with rice as it is healthy ingredient.
Ingredients:
Whole wheat flour – 250 gms,
Salt,
Rice flour – 1 Tablesp,( optional ),
Baking soda – 2 pinch,( optional ),
For tadka:
Mustard seeds – 1/8 tsp,
Urad dal split – 1/4 tsp,
Jeera – 2 pinch,
Red chilli – 2, broken into small pieces, ( skip for kids ),
Curry leaves – 1/2 tsp chopped fine,
Chopped coriander leaves – 1/2 tsp,
Oil – 1/2 tsp for tadka and to prepare dosa,
Method:
1).prepare batter with wheat flour to normal dosa consistancy. Add salt and keep it aside.
2).Prepare tempering with mustard, dal, jeera, chopped curry leaves, chilli and fry till dal changes colour. Remove from flame and add it to the batter when it is little warm.
3).Add baking soda, chopped coriander leaves and mix very well.
4). Smear a cut onion on dosa tawa and Put a laddle ful of batter .Slowly and carefully spread the batter into a thin round. Drizzle a little oil over the edges and centre.of dosa. Cook for 30 seconds till bottom is lightly browned. Turn and keep it for 15 seconds and remove dosa on to a plate.
5).Serve dosa hot with peanut chutney/ coconut chutney etc. These dosa are a little soft and it is a kids favourite. You can have it even with out chutney.
Tip:
a).As a variation ( especially for kids ) you can add a tablesp of jaggery and prepare dosa.
b).Best break fast for diabetics.
