1)Fried Onions for garnishing rice preparations like jeera rice/pulov/chats etc
Instead of deep frying onion slices in oil you can prepare them in microwave oven using very little oil.
Take 3 medium size onions and slice them fine.Add 1 to2tsp of oil to the slices,mix well.Spread the slices on a greased microsafe tray and microhigh for 10min.After 5min.(of starting) stir them once after every 2min.Check for crispness and if necessary cook for another 2min.
They are as crispy as the deep fried ones.Use as and when necessary.
2)Preserving the curry patta leaves for 2 to3months.
Wash the curry patta leaves and dry them on a clean cotton cloth(or under fan).Gently rub the leaves with few drops of any cooking oil(2 to3drops for a handful of leaves) Spread the leaves on turn table and microhigh for30 to45 sec.(in batches).Check them for dryness ,if necessary put them for another 10sec.If by chance moisture is there leaves turn black when microwaved.Hence absolutely there should not be any moisture.The advantage is, the leaves retain their bright green colour and flavour too for 2 to3months.After microwaving the leaves preserve them loosely in a paper bag and keep it in fridge.Use as and when necessary.
