This delicious dahi vada is one of the favourite items for every body especially during hot summer days.Here iam giving very simple procedure with out any fancy decorations.( I prefer this way ).
Ingredients:
Urad dal or whole urad with out husk – 125 gms,( washed and soaked in clean water for 3 hrs ),
Salt,
Green chilli – 2,chopped very fine,
Red chilli – 1, cut into small pieces,
Mustard seeds – 2 pinch,
Jeera – 2pinch,
Hing – 1 pinch,
Finely chopped ginger – 1/4 tsp,
Curry leaves – few ,chopped finely,
Chopped coriander leaves – 1 tsp,
Oil – to fry vada and a little for tadka,
Milk as needed ( about 30 ml).
Fresh curd – 350 to 400 ml, whisked and kept ready,
Method :
1).Drain water from dal and put it in mixie.Grind the dal to a very fine fluffy paste by adding very little amount of water and salt.( The paste should be so light and fluffy ,when you drop a small blob of paste in water it should float ).
2).With moist fingers drop small gooseberry size portions and fry them under medium low flame till light golden in colour.
3).Prepare all vada and keep them aside.
4).Heat 2tsp of oil ,prepare tadka with mustard seeds, urad dal, jeera,chilli, hing and curry leaves.When mustard crackles, remove from flame , slightly cool and add the tadka to curd. Add salt and mix well.
5).Now add hot milk, mix very well and drop the vada into curd milk mixture. Toss the basin gently so that each and every tiny rounds will be coated with curd.Sprinkle chopped coriander and cover it with a lid for minimum one hr. Serve this delicious simple vada / dahi balla / perugu vada as evening desert .
