oThis is a simple, mildly spiced side dish ,best served with chapathi/ roti/ poori/ dosa etc. A good side dish for diabetics.
Ingredients:
Chow chow or chayote or Bengaluru vankaya – 2 medium size ( approximately about 350to 400 gms),
Onion – 2 medium, cut into small pieces,
Green chilli – 3 , each cut vertically into two,
Red chilli powder – 1/2 Tsp,
Haldi – 1/8 Tsp,
Salt,
Peeled garlic cloves – 6,
Tomato. – 1, medium, cut into pieces,
White til/ sesame seeds – 3 Tablespoons, dry fried and coursely powdered,
Dhania powder – 1Tablesp,
Jeera – 1/4 Tsp,
Curry leaves – few,
Chopped coriander leaves – 1 Tablesp,
Mustard seeds – 1/4 Tsp,
Oil – 2 Tablespoons,
Method:
1).Wash, peel and cut the chow chow into 1 to 1 and 1/2″ cubes. Keep them aside.
2).Heat oil in pressure cooker,add mustard seeds, jeera, garlic, curry leaves. Fry for few seconds. Add onion, chilli pieces, fry for few seconds.
3).Add tomato pieces and fry till mushy. Add chow chow pieces and mix once. Add dhania powder, chilli powder, haldi and salt. Stir well and sprinkle 2 tablespoons of water. 4).Close the cooker and cook for two whistles.
5).Allow the cooker to cool down. Remove the lid and keep the cooker on flame. Sprinkle sesame powder liberally over the curry and stir gently so that the pieces are well coated with the powder. Keep the cooker for another 15 seconds and remove .Garnsh with chopped coriander. Serve this side dish with chapathi/ roti/ poori/ dosa etc.
Tip:
If lot of moisture is there (after opening the cooker) let the cooker be on flame till the curry becomes a little dry. Then sprinkle the sesame powder.
