Chapathi From My Kitchen(Andhra Pradesh)
This is made from whole wheat flour.
Ingredients:
Whole wheat flour-300Gms.
Salt.
Extra flour for rolling chapathi.
Oil to prepare chapathi.
2 Tablesp of fresh curds/2 Tablesp of milk/2 Tsp of oil for preparing dough.
Method:
1).Mix flour with salt and oil/milk/curds.
2).Add water little by little and prepare a soft and pliable dough. let it rest for 1/2hr.
3).Divide the dough into 8 to 10 balls.
4).Take a ball of dough, roll it into a 4″round roti using flour.Make use of all balls to make round rotis.
5).Dip fingers in oil and smear very little on each round,fold it into a 1/2 circle ,again fold it into a traingle.
6).Fold all the rounds into triangles and keep them covered.
7).Roll the triangles into 7to8″ thin rotis ( they should be still in triangular shape).
8).Fry the chapathi under medium high heat till lightly browned on an ordinary tawa using little oil.
9).you can minimise using oil at this stage, by allowing chapathi to cook without using oil, before removing from tawa smear few drops of oil on both sides.Turn once or twice and remove.
10).Now nice layered chapathi or roti is ready in your plate.
11).Serve this with any gravy curry of your choice.
12).My routine method is to prepare 4″rounds into triangular folds one by one and fry them one after the other.
13).If you fold them all at a time you can cook them leisurly(prevent drying of dough by putting a cover).
