Crispy and tasty vada with bottle gourd / sorakaya

This simple snack is very easy to prepare with tender bottle gourd / sorakaya / aanapakya/ kaddu and easily available ingredients in our kitchen.
Ingredients:
Tender bottle gourd – about 200 to 250 gms piece, washed, peeled and grated into medium gratings after removing the central part,Keep it aside,
Rice flour – 100gms, ( little more if required ),
Salt,
Haldi – 1/4 tsp,
Onion – 1, small, sliced fine,
Green chilli – 3, chopped fine,
Ginger chopped fine – 1/2 tsp,
Curry leaves – few, chopped fine,
Chopped coriander leaves – 1 tablesp,
Crushed dhania seeds – 1 tsp,
Jeera – 1/2 tsp,
Besan / fried dal powder – 2 Tablesp,
Course powder of 1/2 inch piece of cinnamon and 3 cloves,
Oil to deep fry,
Method:
1).Take gourd gratings into a mixing bowl. Sqeeze out the water content. Add all the ingredients to gratings except rice flour, besan and oil. Mix all very well wth clean hand. Drizzle a tablesp of hot oil over the dough and mix well.
2).Mix the flours with the dough to get moderately firm consistancy dough. If you feel the dough is very dry sprinkle little water.if it is very soft add little more rice flour. But do not add too much of rice flour.
3).Check salt and make thin vada and fry in oil under medium low flame to golden in colour. Remove them on to a kitchen tissue.
4).Enjoy these crispy and crunchy vada as evening snack with tea. You can include it in break fast items also.
