Arbi/ chama dumpa in Telugu/ colocasia – 250 gms,
Salt,
Red chilli powder – 1/2 tsp,
Besan – 2 tablesp, ki
Rice flour – 2 tablesp,
Haldi – 1/8 tsp,
Jeera powder – 2 pinch,
Dhania powder – 1 tsp,
Garam masala – 1/4 tsp,
Amchur – 2 pinch,(optional),
Pepper powder – 2 pinch,
Chopped coriander leaves – 1 tsp, (optional).
Method:
1).Wash the arbi thoroughly and boil it in pressure cooker with 200ml. Of water for 2 whistles.
2).When the steam escapes, open the cooker and drain the arbi. Peel and cut them into 1/2 inch
roundels.
3).Mix all the masala powders with 2 tablesp of besan and 2 tablesp of rice flour along with salt. Drop the arbi pieces into flour and toss them very well so that each piece is nicely coated with masala mix.
4).Heat a grill pan or non stick pan, drizzle 1 and 1/2 tablesp of oil, spread the arbi pieces with out over lapping. Fry them on one side, drizzle another tablesp of oil ,turn the pieces and brown the other side also.
5).Check and see that all pieces are fried well with uniform coating of masala. Toss once gently and garnish with finely chopped coriander leaves if you desire. Serve them with plain rice and sambar/ other rice items.
