Healthy and crunchy Keera Vada with amaranthus greens

Ingredients:
Amaranthus greens – 50 Gms approximately,( picked, washed, and chopped – tender stalks and leaves),
Urad dal preferably with husk – 125 Gms, washed and soaked for 4 hrs,
Onion – 1,medium, cut into small pieces,
Green chilli – 2, chopped very fine,
Ginger,- 1/2 inch piece, chopped fine,
Chopped curry leaves – 1 Tsp,
Chopped coriander leaves – 1 Tablesp,
Garlic cloves – 2,peeled and crushed,( optional ),
Salt,
Oil to fry,
Method:
1).Remove husk ( 3/4 of husk) and completely drain out water from the dal. Grind it into a course paste with out adding any water.
2).Add all the ingredients except oil, and mix very well. Prepare thin round vada and drop in medium hot oil. Fry them till they are light golden in colour. Remove them on to a kitchen tissue to absorb excess oil if any.
3).Serve these hot, healthy, protein rich and crunchy vada with peanut chutney/ coconut chutney as break fast item or with evening tea.
Tip:
a).If urad dal with husk is not available, you try to use dal with out kusk. But former is more tasteir than later.
b).Best for diabetics but in small portions. This is a way to mix healthy greens in snacks for kids also.
