Tomato pulav with premix

Tomato pulav premix is very easy to prepare and very handy in busy hrs. If you have cooked rice ready, you can prepare delicious pulav with in 5 minutes.You can conveniently use leftover rice also. It is a best lunch box recipe.
Ingredients for premix :
Firm and ripe tomato – medium, 6 to 7,( 350 to 400 Gms ),
Red chilli – 8 if spicy,
Onion – 1,medium, sliced fine,
Green chilli – 2, slit lengthwise,
Jeera – 1/2 Tsp,
Haldi – 1/2 Tsp,
Ginger garlic paste – 1 and 1/2 Tsp,
Cloves – 4,
Cardamom – 3,
Cinnamon – 1/4 inch pieces 4,
Bay leaf – small size 2,
Dhania powder – 1 Tablesp,
Garam masala powder – 1/2 Tsp,
Chopped coriander – 1 Tablesp,
Chopped mint – 1 Tsp,
Cashew nuts – 10 halves ( fried in a drop of oil and to be added to prepared pulav ),
Mustard seeds – 1/4 Tsp,
Urad dal – 1 Tsp,
Channa dal – 2 Tsp,
Oil – 4 to 5 Tablesp,
Desi ghee – 2 Tablesp,
1).Heat 2 Tablesp of oil in a kadai, add red chilli ,fry for a minute. Add onion, fry till it becomes soft. Add chopped tomato and cook till the tomato becomes mushy. Remove and grind them into a fine paste. Keep it aside.
2).Heat remaining oil along with ghee, add mustard seeds, jeera, dals, cloves, cardamom, cinnamon, bay leaf, fry till the dals change colour and mustard crackles.
3). Add green chilli, fry for a second, add ginger garlic paste and cook till raw smell disappears. Add dhania powder, haldi, garam masala, chopped coriander, mint and fry for a minute. ,Add boiled green peas and cook for 2 minutes.
4).Add tomato chilli paste along with salt and cook till oil separates at the sides of kadai.
Preparation of pulav:
Add 1 and 1/2 tablespoons of premix to 2 cups of cooked rice.Mix very well preferably with clean hand. Check spicy ness.If it is more spicy / less spicy adjust quantity of premix.Serve it with any curd raitha and papadams.Can be stored in fridge and used upto 3 weeks.
a).See that rice is fluffy.
b).I prefer to add freshly fried cashew to prepared pulav to have that crunchy taste of the nuts.
c).I added boiled green peas after 3rd step just for variation.If you desire you can omit it.
d).Substitute 2 Bangaluru tomato if available.
