Cucumber fry with sesame masala

This cucumber fry is a very quick and easy preparation with sesame masala.It is an excellent side dish for diabetics as it contains fibre ,vitamins with lot of water content and low calorries . It requires minimum ingredients.There are many varieties of cucumbers.Here iam using curry cucumber which is a bit tangy with nutritious seeds. Here we are adding calcium rich sesame seeds.
Ingredients:
Yellow dosa Kaya (Telugu )/ Guntur curry cucumber/ Madras cucumber – 300 Gms,
Onion – 1 medium, sliced fine,
Green chilli – 3 each slit vertically into two,
Red chilli powder – 1/2 Tsp,
Haldi – 2 pinch,
Salt,
Hing – 2 pinch,
Oil – 2 to 3 Tablesp,
Curry leaves – few,
Chopped coriander leaves – 2 TSP,
Sesame powder – 3 Tablesp,( dry fried,and grind with 3 peeled garlic cloves,1/4 tsp jeera and 1 red chilli ),
Method:
1).wash,peel and cut cucumber into long thin stripes. You need not remove the seeds.( I like them to add ),
2).Heat oil,add onion, green chillies and curry leaves.Add haldi, hing and fry the onion till it turns pink.
3).Add cucumber pieces,chilli powder and salt. Cover and cook covered with lid.Pour 2 Tsp of water on the lid to prevent curry sticking to the bottom.Stir the pieces now and then till the vegetable is soft.( No water is added to the curry ).
4).Sprinkle sesame masala over the fry and mix well.Garnish with chopped coriander leaves.
5).It can be served with rotis/ plain rice with sambar as side dish.
Tip:
Some cucumbers are bitter .Some times the flesh / seeds taste bitter. Hence try to check and proceed.
