Ragi urundai/ Ragi simili are similar to our Andhra ragi laddu but with little differances in preparing. It is one of the best millets as it is enriched with calcium and fiber.It has got high protein content and very useful aminoacids. This simili is a best healthy snack for kids. Ragi millet is very beneficial for diabetics and dieters also.
Ingredients:
Ragi flour / nachni flour / finger millet flour – 300 Gms,
Jaggery – 200 Gms,or more
Peanuts – 125 Gms,( dry fried and peeled ),
Til/ white sesame seeds – 50 Gms,( dry fried ),
Cardamom powder – 1/2 Tsp,
Pinch of salt,
Desi ghee – 1 Tablesp.
Method:
1).Take ragi flour in a mixing bowl ,add a pinch of salt and make a soft dough by adding water little by little.Keep it aside.
2).Devide the dough into 2 to 3 parts.Pat a roundel on a polythene sheet / banana leaf and fry it on a greased tawa on a low flame till crisp. Drizzle some ghee over it while frying. Fry all the portions in a similar way. Cool , break them into small pieces and keep them aside.
3).Make a course powder of peanuts along with sesame seeds by using pulse.Remove.
4).Grind the fried ragi pieces and jaggery into a fine course powder .Add elachi powder along with peanut til powder and grind till well combined and remove .
5).Make laddus and serve as snack.
6).Some prefer to add coconut to ragi mix. But the laddus are to be consumed within 2 days.
Tip:
Another method of preparing ragi simili is by steaming the flour ( like ragi puttu ) yand later mixing the other ingredients.
