Yellow pumpkin burfy

This is a very delicious dessert with humble vegetable – yellow pumpkin.
Grated yellow pumpkin – 250 gms, (pumpkin washed, peeled and grated fine),
Sugar – 150 gms or less
Cardamom powder – 1/4 Tsp,
Ghee – 2 Tablesp,
Milk powder – 2 Tablespoons,
Desiccated coconut – 30 gms,
Fine suji/ semolina – 1Tablesp,(optional),
Almond slivers and fine cashew bits – 2 Tsp each,
1).Heat ghee in a non stick pan, fry the Suji for few seconds. Add grated pumpkin and fry under low flame for two minutes till there is no raw smell.
2).Add desiccated coconut, fry for 2 minutes. Now add sugar and milk powder along with elachi powder. Cook the mixture till it leaves the sides of the pan. Pour this mixture on a greased tray. Press evenly and decorate with nuts. Allow to cool.
3).Cut the burfi into desired shapes and serve.
a). As already pumpkin is sweetish in nature , adjust the quantity of sugar as per your requirement.
b).No need to add colour as the sweet / dessert is in pretty yellow in colour.
