Tutti frutti Recipe

Tutti frutti is one of the ingredients / recipes used frequently in baking and also in preparation of sweets. It is quite inexpensive when compared to nuts.We can prepare it very easily at home. Usually raw papaya is used to prepare tutti frutti. White marrow portion of water melon also can be used.
Raw papaya – 300 Gms,
Sugar – 150 Gms,
Vanilla essence – 1/4 Tsp,
Food colours – like yellow, green, orange etc,
1).wash, peel,remove seeds and inner layer of papaya. Cut papaya into very tiny pieces.
2).Add just sufficient water to immerse the pieces and boil till the pieces turn semi transparent. Drain the water and keep them aside.
3).Dissolve sugar in 250 ml of water and allow it to boil. Add the papaya pieces and cook till the sugar syrup reaches one string consistency and the pieces become trasparent but firm to touch. Add essence , mix well and remove from flame .
4).Divide the pieces into small portions along with syrup . ( to add food colours ) .
Add 3 to 4 drops of food colours ,( drops or powders ) to those portions.Mix well and keep them overnight to soak in coloured syrup.
5).Next day , most of the syrup is absorbed by the pieces .Drain them from remaining little syrup that is left and place them on tissue paper to dry them for 4 to 6 hrs.
6).Store them separately or combined , for later use.
