This pakoda is very crispy and healthy prepared with tender curry patta leaves and protein rich peanuts.
Ingredients:
Raw Peanuts / ground nuts – 100 Gms,( washed and water drained completely ),
Curry patta leaves – 2 handfuls of tender leaves,
Besan – 125 Gms,
Rice flour – 1 Tablesp,
Ajwain – 1/2 TSP,
Cloves – 3,
cinnamon – 1/2″ piece,( pound both cloves and cinnamon into a course powder ),
Coriander leaves – 1 Tablesp ,chopped,
Crushed garlic cloves – 4,
Salt,
Ginger and green chilli paste – 1/2 TSP,
Oil to deep fry,
Method:
1).Mix all the ingredients (except oil ),into a tight dough adding 2 tablesp of hot oil and very little water.
2).Drop small portions of dough into hot oil and fry under medium heat till light golden in colour.
3).Remove them on to a kitchen paper to absorb excess oil.
4).Serve this pakoda with evening tea.
Tip:
Curry leaves are very good for health and there are many recipes like chutney, chutney powders, rice preparations, pulusu type of curries etc .made ,using curry leaves as one of the ingredients.
