Ingredients:
300 gms brinjal
2 tbsp red chilli powder
1 tsp haldi
1 1/2 tbsp salt
4 tbsp oil (preferably til)
2 tbsp tamarind paste
10 garlic cloves peeled
1/2 tsp methi powder
1 tsp mustard powder
Method:
1. Wash and wipe brinjals with a clean cloth.
2. Cut them into 3/4 cubes and sprinkle salt. Keep them aside.
3. Mix all masala powders and remaining salt.
4. Heat oil to smoking point and remove from fire. Add brinjal pieces and tamarind paste. Mix well and let it cool completely.
5. Add masala powder mix add garlic.
6. Mix well with a wooden spoon,so that brinjal is coated with masala and oil. check salt.
7. Can be served after 2 days. keeps good in fridge for 10-15 days.
8. Best served with curd rice.
