Paala Puri
Paala Puri/Milk puri from Andhra.A very delicious sweet served in festivals(usually family functions).
These Puris are dunked in sweetened ,thickened milk and garnished with nuts
Ingredients:
All purpose flour/Maida-300Gms
Ghee-1Tablesp
Salt
Milk-1and 1/2 litres
Sugar-25oGms(or more)
Cardamom powder-1/4Tsp
Cashew nuts-6to8,chopped fine
Almonds-8,slivered fine
Raisins-1Tablesp
Finey grated fresh coconut-5 to6Tablesp
Saffron strands-A pinch(optional)
Tutti frutti-1Tablesp
Oil to deep fry
Method:
1).Prepare a little firm but pliable dough using flour,salt and ghee as for puris.Keep it covered for 15min.
2).Boil milk , add sugar and stir till the sugar dissolves.Remove 300 ml of milk and keep it aside.Allow the remaining milk to thicken until the quantity is reduced to 3/4th litre.
3).Add elachi powder and saffron to the thickened milk. Mix well and keep it aside .
4)Fry nuts along with raisins in a drop of ghee and keep them in a bowl along with coconut.Add 2tabsp of sugar and mix well.
5).Prepare puri as usual.Remove them when they turn light golden in colour and do not allow them to become crispy as we have to fold them.Prepare all puris and keep them on a plate.
6).1 hour before serving take puri one by one and dip them in milk for a second (kept aside with out thickening). Arrange them on a plate,Place a spoonful of filling in the centre and fold it.keep them preferably in a single or double layer.
7).For serving: place 2 to3 folded puris on an individual plate and Pour 2 tablesp of warm thickened milk. Garnish with little stuffing or tutti frutti and serve.
8).Do not stack the folded puris one above the other as they tend to stick together and cannot be separated for serving.
Tips:
You can substitute sugar free powder (sucralose)in place of sugar for dieters and diabetics.

You can replace 1/2 the quantity of refined flour with wheat flour.
If the puris are crispy put them in microwave for 10sec.to make them soft (before puttig filling).
