Delicious Chutney with ripened ivy gourd / Coccinia

Do not throw away ripe ivy gourds. We can prepare tasty chutney with them.
:Ingredients:
Ripened gourds – 150 gms,( wash gently and cut into 2 to 3 pieces),
Onion – 1 medium, chopped roughly,
Salt,
Red chilli – 5 to 6,
Peeled garlic cloves – 6,( 5 chilli for chutney and one for tadka ),
Jeera – 1/4 tsp,
Dhania seeds – 1/2 tablesp,
Mustard seeds – 1/4 tsp,
Split urad dal with or with out skin – 1 tsp,( 1/2 for chutney, 1/2 for tadka ),
Channa dal – 2 tsp,( 1and 1/2 tsp forchutney , remaining for tadka
Curry leaves – few,
Tamarind paste – 1 tsp,
Chopped coriander leaves – 2 tsp,
Hing – 2 pinch,
Oil – 2 tablesp,
Method :
1).Heat a tablesp of oil, add jeera, dhania seeds, channa dal, red chilli, garlic fry till nice aroma appears. Remove them on to a plate,
2).In the same pan add onion and gourd pieces, fry till they become soft.Remove them on to a plate and allow it to cool.
3).Blend the first fried dal into a course powder. Now add fried onion, gourd pieces, tamarind paste, salt and blend into a lightly course paste.
4).Add chopped coriander leaves and few raw onion pieces ( optional ) and run the mixie using pulse once.
5).Remove the chutney in to a bowl. Heat remaining oil and give tadka with mustard seeds, dals, curry leaves, chilli,and hing, Mix well and serve with break fast items like idli/ dosa/ roti/ curd rice, hot plain rice with a tsp of ghee.
Tip:
Add 2 pinch of jaggery to chutney if you desire.
