Yellow Cucumber ( Guntur dosakaya ) curry with sesame powder

This curry is a very simple recipe and can be prepared quickly with minimum ingredients along with calcium rich sesame. It is a less spicy iguru type of curry and very light on stomach. This cucumber / dosakaya (in Telugu)which is yellow or yellow with green stripes is available in plenty in Andhra area , a favourite vegetable creeper for kitchen gardens.It is enriched with antioxidants, vitamins, minerals, lot of fibre and water. They help in controlling the blood sugar levels, preventing constipation, weight control etc.We can prepare curries, pulusu and sambar. Ingredients:
Yellow cucumber – 1 approximately weighing 350 gms,( washed, peeled, and cut into 1 to 1 and 1/2 inch cubes,
Onion – 2, medium, cut into small pieces,
Green chilli – 2, slit into 2,
Red chilli powder – 3/4 tsp,
Haldi – 1/8 tsp,
White sesame seeds powder – 2 tablesp,( dry fried and powdered ),
Salt,
Oil – 2 tablesp,
Dhania powder – 1/2 tablesp,
Chopped coriander leaves – 1/2 tablesp,
Method:
1).Heat oil in a kadai, add onion, green chilli and fry till onion becomes soft. Add dhania powder, haldi, chilli powder and fry for a few seconds.
2).Add cucumber pieces, along with salt, stir once , cover and cook for 2 minutes under low flame. Remove the lid and add 2 tablesp of water .Stir again and cook till the cucumber pieces become soft.
3). Now add til powder, mix well , cook for few seconds and remove.
4).Serve with hot plain rice with a tsp of desi ghee.You can serve with roti preparations.
Tip:
a).Always check a piece of cucumber and also seeds for bitter ness. In some the flesh is bitter, in some the seeds are bitter. Hence check and proceed.Incidentally this curry is my favourite one.
b).As the water content is more it is a low calorie item one of the best curry for diabetics and dieters.
c).We are using minimum oil. You can even reduce it to 1 and 1/2 tablesp.
