Delllicious kaju curry.

Actually tender kaju / jeedi pappu ( in Telugu ) are available in summer time only. In Andhra Pradesh this is a favourite and popular dish for every body. But we used to wait till every summer time . As kids we eagerly used to wait to enjoy this curry in those months. But the problem is the preparation, but it’s worth waiting for it. We have to get jeedi ginjalu along With jeedi mamidi pandu. We can consume pandu / fruit as it is sweet and tasty.The remaining part is jeedi ginga which contains cashew / jeedi pappu the most delicious item. Even the process of removing the cashew from jeedi ginjalu is a tough and laborious one. But we can forget this difficult part while enjoying the curry. Now here is the recipe.
Ingredients:
Tender cashew nuts – 250 gms ( Cutting the jeedi ginga and removing the cashew along with its chilka,Chilka is removed and cashew are washed and kept aside.).
Salt,
Oil – 3 tablesp,
Haldi – 1/4 tsp,
Red chilli powder – 1 tsp,
Dhania powder – 1 tablesp,
Jeera – 2 pinh,
Jeera powder – 1/4 tsp,
onions – 2 to 3 medium size cut into small pieces.
Green chilli – 2,chopped fine,
Ginger garlic paste – 1/2 tsp,
Curry leaves – few,optional,
Method:
1).Heat a kadai with oil, add jeera, green chilli, onions, curry leaves and fry till the onion becomes soft and pink.
2).Add ginger garlic paste, haldi,salt and cook for 2 minutes till raw smell of ginger garlic paste disappears.
3).Add chilli powder, dhania powder, jeera powder and cook for a minute.
4).Now add cashew nuts along with 150 ml of water. Stir very well, cover and cook till cashew becomes tender and gravy becomes little thick.If necessary you sprinkle few spoons of water while cooking.So the delicious Andhra special dish cashew curry is ready. Serve this with hot plain rice ( we enjoy it like that only )/ break fast items like poori/ chapathi/ dosa etc.

b).Diabetics also can enjoy it but in moderate servings.
