Healthy and tasty Bhendi / benda kaya / okra / dosa

Bhendi/ benda kaya ( Telugu ) dosa is very easy to prepare and requires minimum ingredients. This versatile vegetable is rich in fibre and prevents constipation. It is full of beneficial nutrients and also rich in antioxidants. This vegetable requires very little cooking time. In this recipe You can use the cut end pieces of bhendi or whole bhendi.
Ingredients:
Bhendi or cut end portions of bhendi – 2to 3 bhendi or 7 to 8 cut ends,
Raw rice – 200 gms,( washed and soaked for 4 hrs along with methi),
Grated coconut – 3 Tablesp,( you can use desiccated coconut ),
Methi – 2 pinch,
Salt,
Baking soda – 1 pinch,
Oil to prepare dosa.
Method:
1).Drain the rice and wash once again. Put the drained rice, bhendi pieces,coconut and blend into a very fine paste using little water in batches.
2).Allow it to ferment for 6 to 8 hrs or over night.
3).Next day morning add salt and required amount of water (if necessary )to bring it to dosa batter consistancy. Add a pinch of baking soda and mix well.
4). Heat dosa tawa , ( non stick or cast iron ) heat it to high , rub with a cut onion with a drop of oil, lower the flame Put laddleful of batter , spread it into thin round dosa. Drizzle few drops of oil over the edges and centre of dosa. Cook on both sides under low medium flame and remove it on to a plate. Prepare all dosa using the remaining batter. Usually these dosa are soft as we are using bhendi. Serve with any chutney like coconut chutney/ peanut chutney/ sambar /potato poratu.etc.
Tip:
a).use only tender bhendi.
