This pakoda/ fritters are prepared with healthy amaranthus greens. This is one of the best leafy vegetables available in India. Amaranthus is called thotakoora in Telugu. Two types of amaranthus are easily available in Andhra pradesh with green and red stems. This vegetable has many health benefits.
Ingredients:
Amaranthus leaves along with tender stems – 100 Gms ( Throughly wash and chop the leaves and tender stems. Keep them aside ),
onion – 2,medium,sliced fine,
Green chilli – 4,
Ginger – 1/2 inch piece,
Dhania seeds – 1 Tablesp,
Jeera 1/4 Tsp,
Ajwain – 2 pinch,
Ginger garlic paste – 1/3 Tsp,
Chopped coriander leaves – 1 Tablesp,
Chopped curry leaves – few,
Salt,
Haldi – 1/8 Tsp,
Besan – 4 to 5 Tablesp,
Rice flour – 2 Tablesp,
Oil for deep frying.
Method:
1).Make a course paste of ginger, green chilli, dhania, jeera with salt and keep it aside.
2).Take sliced onion pieces in a wide plate and gently crush them with clean hand. You can notice that onion releasing water. Now add green chilli paste, ginger garlic paste, ajwain, haldi and mix well with onion pieces.
3).Add chopped amaranthus, chopped coriander and curry leaves. Mix all very well. Now first add 3 tablesp. of besan,mix and again add another 2 Tablesp along with rice flour. Sprinkle a Tablesp of hot oil and mix gently but throughly. If needed add little water.
4).Check salt and drop the pakoda dough into hot oil with fingers, moving to release dough like small fritters ( not like balls ). Fry under medium low flame till golden in colour. Remove them on to a kitchen tissue to absorb excess oil if any.
