This brinjal side dish is very simple and requires minimum ingredients. It can be prepared in a jiffy and served as side dish for Sambar rice/ curd rice / roti preparations.
Ingredients:
Tender medium size brinjals – 6,( Check for any insects or worms while giving a nick),
Salt,
Red chilli – 8 to 10, ( use less spicy if you desire),
peeled garlic – 6,
Jeera – 1/2 Tsp,
Dhania seeds – 1 and 1/2 Tablesp,
Fried Channa dal – 1 Tablespoon,
Oil – 2 to 3 Tablespoons,
Method:
1).Dry fry dhania, jeera, Red chilli, garlic, one by one and grind them with fried Channa dal with little salt into a course powder. (not very course ).keep it aside.
2).Wash brinjals, give a nick on one side and smear a little oil all over it. Arrange them on flame over a pulka jali.Turn them frequently so that whole vegetable is roasted well on all sides ( with out getting charred).
3).Cool and remove the outer black layer carefully with out removing the pulp. Check the pulp once and stuff a 3/4 to 1tsp of stuffing into it.Prepare all brinjal with stuffing and close them by pressing gently.
4).Heat oil in frying pan, arrange them on Pan with out overlapping and fry them on all sides .If necessary drizzle few more drops of oil over them while frying. If there is any stuffing left over, sprinkle it over fried brinjals.
Tip:
You can microwave the brinjals in microwave oven by making deep cuts on them. But the nice roasted aroma which we get on flame will not be there.
