This chicken fry is a very quick and simple preparation with minimum spices. l
Ingredients:
Chicken – 300 Gms,
Salt,
Vadagam – 2 Tsps,( This is sun dried onion slices combined with some spices),
Red chilli powder – 1Tsp,
Dhania powder – 1/2 Tablesp,
Sounf – 1 pinch,
Haldi – 2 pinch,
Oil – 2 to 3 Tablespoons,
Curry leaves – Few,
Ginger garlic paste – 1/2 Tsp,
Method:
1).Wash and cut chicken into bite size pieces.
2).Heat oil in a thick bottomed pan, add sounf, vadaganm and curry leaves. Fry for a second and add chicken pieces.
3).Stir once, add haldi,salt,dhania powder and chilli powder. Stir well, cover with a lid and cook under low flame for 2 to 3 minutes. (no need to add water).
4).Remove the lid, add ginger garlic paste and mix very well.Cover and cook again under low flame till raw smell of masala paste disappears and chicken becomes tender and dry. ( Stir once or twice in between).
5).Garnish with fried cashew if you desire. Serve with hot plain rice and sambar/ poori/ chapati etc. You can serve it as a snack also.
Tip:
Vadagam is prepared into round lemon size balls or in loose form. This item is very popular in some regions of Andhra – especially Rayalaseema areas. It is used in thalimpu (tadka) of rasam/ dal preparations. If gives a wonderful aroma to the dish to which it is added.You can check my list of recipes for “Vadagam”.
