This flavourful chutney with the wonder herb mint or Pudina is very healthy and goes very well with all rice preparations and break fast items like dosa/ idli etc. Preparation is very easy and quick.
Ingredients:
Mint/ Pudina – 150 Gms,
Onion – 1 medium, sliced fine,
Green chilli – 5to 6,
Red chilli – 1,
Jeerá – 1/4 Tsp,
Salt,
Peeled garlic cloves – 6,
Tomato – 1 medium, sliced fine,
Freshly grated coconut – 3 Tablespoons,
Hing – A pinch ( optional),
Haldì – 1/8 Tsp,
Oil – 2 Tablespoons,
Channa Dal – 1 Tablesp,
Urad Dal – 1 Tsp,
Mustard seeds – 1/2 Tsp,
Curry leaves – A sprig,
Chopped coriander leaves – 1 Tablesp.
Method:
1).Pick mint leaves from their stalks and wash them well to remove dirt, sand etc. Keep them aside.
2).Heat a tsp of oil, fry jeera, urad dal, Channa dal, chilli and peeled garlic till dals change colour.Remove.Add a tsp of oil to the same pan.
3).Add mint leaves into the pan and cook under low flame for two minutes till they are soft. Add tomato pieces along with haldi and cook till the tomato becomes mushy. Add coconut, mix well and cook for a second.
4).First grind the dal mix and again add mint mix, salt, tamarind paste and grind them into a light course paste.
5).Remove the chutney into a bowl. Heat remaining oil fry mustard seeds, hing, red chilli, curry leaves and onion pieces, Fry for few seconds and add this to chutney. Sprinkle coriander leaves. Mix well and serve it with hot plain rice/ rice preparations, dosa/ Idli etc.
Tip:
You can use desiccated coconut in place of fresh one.
