Alasanda peruguvada(Lobiya Vada In Curds).
Ingredients:
Black eyed beans/lobiya- 250gms (soaked for 3hrs).
Urad dal- 2tablesp (soaked aong with beans).
Salt.
Fresh thick curds- 400gms (well churned after adding little salt).
Green chillies – 3 ,chopped fine,
Chopped ginger- 1 tsp.
For tempering
Mustard seeds- 1/2 tsp,
Jeera- 1/4 tsp.
Curry patta leaves- 8 to 10.
Chopped coriander Leaves- 1 tablesp.
Hing- a pinch.
Oil to deep fry.
chat masala-1tsp.
Method:
1).Grind beans along with salt into a fine paste.
2).Add chilli pieces and ginger. Mix thoroughly and keep it aside.
3).Heat oil and prepare vada ( with a hole in the centre) to a light golden colour. Remove and drop them into a bowl containing warm water with little salt.
4).For tadka – heat little oil. Add mustard seeds, jeera, red chilli and curry patta leaves. Fry till mustard seeds splutter.
5).Remove tadka from fire and pour over well churned curds. Mix well.
6).Remove vada from water, gently remove water by pressing between palms and drop them into curds. Mix gently.
7).Garnish with chopped coriander leaves and sprinkle chat masala.
8). Serve chilled .
