This crunchy and munchy snack can be prepared very quickly with cauliflower.
Ingredients:
Healthy, firm cauliflower head – 1, approximately about 300 Gms,
Salt,
Ginger garlic paste – 1/2 Tsp,
Garam masala – 1/4 Tsp,
Corn flour – 3 Tablesp,
Rice flour – 3 Tablesp,
Besan – 2 Tablesp,
Haldi – A pinch,
Chat masala – 1/8 Tsp,
Red chilli powder – 1/2 Tsp,
Finely chopped coriander leaves – 1 Tablesp,
Oil to deep fry,
Method:
1).Separate cauliflower into florets and keep them in water with little haldi to remove any insects and dust. Again wash them throughly and blanch them in boiling water with little salt for 5 minutes. Drain and keep them aside.
2).Put the cauliflower in a mixing bowl. Sprinkle the flours and remaining ingredients. Add a Tablesp of hot oil and gently mix the florets very well with all the masalas.
3).Drop masala coated florets into hot oil under medium heat and fry till golden in colour.
4).Remove the fritters on to a plate with a paper napkin to absorb excess oil if any.
5).Serve them hot with any chutney or sauce. You can serve them as side dish for rice preparations.
Tip:
After mixing the masalas prepare fritters immediately with out any delay. Other wise the florets become soggy.
