This tasty, nutricious pulav is prepared with protein and fibre rich channa dal
Ingredients:
Basamathi rice – 250Gms,
Oil -‘2 Tablesp,
Ghee – 2 Tablesp,
Green chillies – 3, each slit into two,
Onion – 1, medium, sliced fine,
Tomato – 1, chopped fine,
Cashew nuts -‘1 Tablesp,
Cloves – 3, cardamom -‘2, cinnamon – 1/4″ pieces – 2,
Shajeera – 1/4 Tsp,
Dhania powder – 1/2 Tablesp,
Red chilli powder – 1/4 Tsp,
Bay leaf – 1,
Pudina – Chopped, 1 Tsp,
Chopped coriander leaves – 1 Tablesp,
Garam masala – 1/2 Tsp,
Soaked green channa – 3 to 4 Tablesp, (:soaked for minimum 6 hrs ),
Ginger garlic paste – 1/2 Tsp,
Garam masala powder – 1/2 Tsp,
Salt,
Method:
1).Wash and soak the rice for 1/2 hr. Keep it aside.
2).Heat oil + ghee in pressure cooker.Fry cloves, cinnamon, cardamom,and bay leaf for 1/2 min.
3).Add shajeera,stir once add chillies,onion with a pinch of salt, fry till onion becomes soft and pink.
4).Add ginger garlic paste and fry till raw smell disappears.
5).Add tomato pieces, cook till they become mushy. Now add garam masala powder, dhania powder and soaked channa. Stir once, add soaked rice along with 500ml water and salt. Sprinkle 1/2 Tablesp chopped coriander, pudina and close the lid.
6).pressure cook for 3 whistles. When cooker is cool, open it and mix the rice gently .Garnish with cashew bits ( fried in a drop of ghee )and remaining coriander.
7).Serve hot with masala brinjal/ brinjal in oil or nune vankaya./ any raitha.
