This is a very simple dish but very flavourful and can be quickly prepared in pressure cooker with commonly available ingredients in our kitchen.
Ingredients:
Basmathi rice – 225 Gms,( I took a glass as a measure ),
Salt,
Green chillies – 4, each slit vertically into two,
Tomato – 2 medium, sliced fine,
Onions – 2 medium, sliced fine,
Ginger garlic paste – 1 Tsp,
Cloves – 3, cardamom – 2, Cinnamon – two 1/4″ pieces,
Bay leaf – 1,
Shajeera – 1/4 Tsp,
Star anise – 1,
Fresh green peas 30 Gms, ( optional ),
Salt,
Oil – 2 Tablesp,
Ghee – 1 Tablesp,
Cashew nuts fried in little oil or ghee – 1 Tablesp,
Method:
1).Wash rice and soak for 1/2 hr.
2).Heat oil + ghee in a pressure cooker , fry cloves, cardamom, cinnamon , star anise and bay leaf for few seconds. Add shajeera and quickly stir once.
3).Add onions and chillies ,fry till onion becomes soft and pink.
4).Add ginger garlic paste and fry till raw smell goes. Add tomatoes and cook till mushy.
5).Add peas and rice ( drained ), Fry the rice for 2 minutes.Add salt and mix well.
6).Add 1 and 1/2 measures of hot water. Sprinkle chopped coriander and a tsp of juice of small lemon. close the cooker and pressure cook for 3 whistles.
7).Allow the cooker to cool ,open the lid and gently mix the rice .Garnish with fried cashew and serve with any curd raitha / masala brinjal in oil / any kurma gravy.
