Ragda patties

This is a very popular street food from Mumbai,but now days available and liked by people all over India. It is not a difficult recipe but requires little extra time to prepare. The recipe is actually preparation of two dishes.These are aloo tikki and white peas masala gravy.Some prefer different types of accompaniments like sev, green chutney, imli chutney etc.
Ingredients:
For Aloo tikki or patties :
Potato – 250 Gms, washed, boiled, peeled and mashed,
Onion – 1 medium, cut into small pieces,
Green chilli – 2, chopped very fine,
Ginger 1/4″piece, chopped very fine,
Garam masala – 2 pinchs,
Salt,
Bread crumbs – 1/2 Cup,
Chopped coriander – 1 Tablesp,
Haldi – 2 pinchs,
Oil – to prepare patties
Method:
1).Heat a tablesp of oil,fry chilli, onions, ginger for 2 minutes,add spices along with salt and potato mash. Mix well. Add breadcrumbs and blend well with potato mix.
2).Make 2 to 2 and 1/2″ discs and shallow fry them on tawa till lightly browned on both sides. Keep them aside.
For masala gravy:
White dry peas – 100 Gms, ( washed, soaked for minimum 4 hrs or over night, boiled with little salt , Keep the excess water if any, with boiled peas, to add to gravy later.).
Onion – 1, medium sliced fine,
Green chilli – 1, chopped fine,
Red chilli powder – 1/4 Tsp,
Haldi – 2 pinches,
Garam masala – 1/4 Tsp,
Tomato puree – 1 Tablesp,
Salt,
Oil – 2 Tablesp,
Dhania powder – 1/2 Tablesp,
Ginger garlic paste – 1/4 Tsp,
Method:
1).Heat oil, add onion, chilli, ginger garlic paste one by one and fry till raw smell disappears.
2).Add haldi, dhania powder, garam masala, chilli powder and fry for a minute.
3).Add tomato puree and cook for 2 minutes. Add boiled peas, a cup of hot water and little salt . Allow it to cook for 2 min under low flame. Adjust gravy
4).Add chopped coriander, mix well and remove from fire.
5).Serve Ragda patties hot with onion rings and other accompaniments if you desire.
