Ingredients
Tender Bhendi – 300 Gms, washed, pat dried and cut into tiny rounds,
Onion – 1, medium, sliced fine,
Green chilli – 2, chopped fine,
Red chilli powder – 1/2 Tsp,
Haldi – 2 pinches,
Salt,
Jeera – 1/4 Tsp,
Cashew bits – 2 Tablesp,
Peeled and crushed garlic cloves – 5,
Juice of 1/2 lime,
Oil – 2 to 3 Tablesp,
Curry leaves – few,
Method:
1).Fry cashew in a tsp of oil and keep it aside.
2).Heat oil in a kadai ( preferably cast iron or non stick kadai ) add jeera, curry leaves , chillies ,garlic and onion. Fry under low flame for 2 minutes till onion becomes soft.
3).Add bhendi pieces and fry under low flame after adding salt, chilli powder and haldi.
4).Sprinkle lime juice all over the bhendi pieces and fry till bhendi pieces become crispy.
5).Add cashew bits , mix well and remove.
Tip:
Adding a tsp of lime juice or a spoon of curd will remove the stickiness of bhendi.
