Beet root Thalimpu in 5 minutes in cooker.

We can prepare this curry in 5 minutes with minimum oil in pressure cooker ( preferably 2 or 3 litres cooker ). Beet root is the best vegetable advised by the doctors to improve haemoglobin in anaemic patients. What ever we prepare with beet root whether it is curry / snack / sweet like halwa, they will be healthy and tasty.
Ingredients:
Beet root – 250 Gms, washed, peeled and grated ( not very fine ),
Onion – 1 medium, sliced fine ,
Green chilli – 2, cut into 2 to 3 pieces,
Salt,
Dhania powder – 1 Tsp,
Haldi – A pinch,
Mustard seeds – 1/4 Tsp,
Urad dal with out husk – 1/4 Tsp,
Red chilli powder – 1/2 Tsp,
Curry leaves – few,
Tomato 1, small ,cut into 4,
Oil – 1 Tablesp.
Mustard seeds – 1/4 Tsp.
Method:
1).Heat oil, prepare thadka with mustard, dal, garlic and curry leaves.Fry till mustard splutters.
2).Add onion, green chilli, and tomato ( if using ), fry till onion turns soft.Add chilli powder, haldi, dhania powder. Stir well,
3).Add grated beet root along with 2 Tablesp .of water and salt.
4).Close the cooker and cook till 2 whistles .Remove the lid when the cooker is cool.
5).Sprinkle coriander , mix well and remove from flame. If necessary put the cooker on flame for another minute if there is any excess moisture left.
6).Serve with chapathi / poori / any roti / for plain rice as side dish.
Tip:
You can add grated coconut along with coriander if you desire. This curry can be used as stuffing for parathas.
