Salted muffins with veggies and oats

These salted muffins are prepared with vegetables and oats.These are very healthy and delicious as tea time snack.
Ingredients:
Oats – 1 Cup, powdered fine, ( I used Eco valley hearty oats ),
Suji/ semolina/ rawa – 3 Tablesp,
Salt,
Oil – 1/2 Cup,
Garam masala – 1/2 Tsp,
Chat masala
Red chilli powder – 1/4 Tsp,
Carrot – 1,small ,grated fine,
Potato – 1, medium ,washed, peeled and grated fine,
Fresh peas – 1 Tablesp, crushed roughly,
Beans – 2, chopped fine,
Capsicum – 1, small, chopped fine,
Curd – 1 Cup, or more,
Baking powder – 1 Tsp,
Baking soda – 1/2 Tsp,
Measuring cups.
Method:
1).Mix all veggies with a pinch of salt and saute in a tablesp of oil till slightly tender.Keep them aside.
2).Mix curd, oil, salt in a mixing bowl and blend well.
3).sieve oats powder, suji, and baking powder , baking soda into oil mix. Add remaining masala powders and beat well to obtain smooth batter.If necessary use little more curd or butter milk.( Rawa absorbs more moisture ).
4).Grease paper cups and pour the batter upto 3/4 th level of the cup. Arrange them in a baking tray and bake for 10 to 12 minutes at 180 degree C in preheated oven.
5).They may not raise like normal cup cakes . But they are fluffy and porous. Serve them with tea.
Tip:
You can microwave the veggies for 4 min. at micro high level instead of cooking.
