Nankhatai in pressure pan

Ingredients:
All purpose flour/ Maida – 1 and 1/2 cups,( seived ),
Fine Suji – 3/4 cup,
Besan – 1/4 Cup,
Powdered sugar – 3/4 Cup, or a little more,
Cardamom powder – 1/4 Tsp,
Ghee/ oil – 1/2 Cup, or combination of both ,
Crushed nuts – cashew and pistha 2 Tsp,
Fresh curd – 1 Tablesp,
Baking soda – 2 pinchs,
Measuring cups and spoons.
Method:
1).Mix flours with sooji and mix well.
2).Mix ghee and powdered sugar.Beat well till the mix looks creamy and smooth.
3).Mix curd and soda.Mix well and add this to ghee sugar cream.Beat well till well blended.
4).Add flour mix to wet ingredients along with cardamom powder and prepare a smooth and soft dough with hand.
5).Make goose berry size balls and flatten them. Make some impressions with knife ( if you desire ) . Put some crushed nut powder in the centre and press gently.
6).Arrange the nankhatai on a greased plate.Keep it on a stand arranged in a preheated pressure pan. ( no need to use sand or salt in pan, or gasket, or weight ).
7).Bake the nankhatai for 15 minutes under medium heat.If necessary continue baking for another 2to 3 minutes.
8).Serve them with tea.
Tip:
You can choose any combination of flour, suji, and besan as per your convenience and method.
