Awesome Pumpkin Cake in pressure pan ( Egg less )

This pumpkin cake is very delicious and healthy.It is prepared with commonly available ingredients in our kitchen.
Ingredients:
Yellow pumpkin – approximately about 150 Gms, ( washed, peeled and grated after removing seeds ),
Jaggery powder – 200 Gms ,
Fresh grated coconut ( preferable ) / dessicated coconut powder – 125 Gms
Cardamom powder – 1 Tsp,
Fine suji / semolina / rawa – 125 Gms,
Ghee/ oil – 3 Tablesp,
All purpose flour – 3 Tablesp,
Baking powder – 1 Tsp,
Baking soda – 1/2 Tsp,
Vanilla essence – 1/2 Tsp,( optional ),
Nuts/ dry fruits as desired – 2 Tablesp,
Milk as per requirement to prepare batter ( for cake batter consistency ),
Method:
1).Preheat pressure pan or kadai with a stand in the centre for 10 minutes. ( Remove gasket and weight ).
2).Mix grated pumpkin ( with out juice ) grated coconut and fry in ghee for 2 min. Add jaggery ,rawa, and remaining ingredients along with juice of pumpkin.
3).Stir well and cook under low flame,till the mixture and juice of pumpkin blend well.
4).Remove from flame and add milk litle by little till you get the cake batter consistancy.
5).Add baking powder and baking soda . Mix well.
6).Pour this batter in a greased baking tray and tap twice to remove air .
7).Garnish with nuts ( dusted with flour ) and bake for 25 to 30 minutes under medium heat .Check after 25 min by inserting a knife.If it comes out clean. If necessary continue baking for another 5 min. Remove and let it cool.
8).Cut into pieces and serve.
Tip:
A).Alternately prepare it in O.T.G. by baking for 30 to 35 minutes .
B). you can increase the quantity of jaggery if you desire.
