Cauliflower stalks and leaves thalimpu

Usually we use cauliflower florets for preparing curries like kurma, fries, etc and we discard the leaves and stalks.But this dry curry or thalimpu ( in Telugu ) is prepared with those leaves.This delicious simple curry tastes like cabbage and can be served as side dish .It is nutritious too as we have added moong protein .
Ingredients:
Tender stalks and leaves of cauliflower – 150Gms, washed,stalks grated and leaves chopped fine,
Salt,
Onion – 1, medium, sliced fine,
Green chilli – 3, choped fine,
Jeera – 1/4 Tsp,
Skin less moong dal – 2 Tablesp, ( washed and soaked for 15 minutes ),
Dessicated coconut powder – 1 Tablesp,( use fresh coconut if you desire ),
Mustard seeds – 2 pinches,
Curry leaves – few,
Chopped coriander leaves – 1, Tablesp,
Oil – 2 Tablesp,
Red chilli – 1,broken into pieces,
Haldi – 1 pinch ,optional,
Peeled and crushed garlic cloves – 6,
Method:
1).Heat oil in a pressure cooker, add mustard seeds,jeera, red chilli, garlic and curry leaves.Fry them till mustard splutters,
2).Add onion,green chilli and moong dal.Cook till onion becomes soft.
3).Add chopped leaves and stalks Add ( haldi if using ) salt along with 2 tablesp of water.Mix well and close the cooker.
4).Cook till 2 whistles.When steam comes down, open the cooker .
5).Mix once and keep the cooker on fire if there is any moisture left.Sprinkle coriander and coconut powder.Mix once and remove.
6).Serve as side dish for rice preparations / break fast items like chapathi/ poori etc
Tip:
You can prepare it with out cooker.You can use it as filling for stuffed paratha.
