This sweet lavanga lathika / lavang latha is a delicious sweet of northeren india.It is very easy to prepare and liked by all ages.
Ingredients:
All purpose flour/ maida – 250 Gms,
Pinch of salt,
Desi ghee/ dalda – 2 Tablesp,
For filling:
Fresh coconut gratings – from one small coconut,
Raisins, almond slivers, pistachio pieces, melon seeds ete as desired – 2 tsp each,
Powder sugar – 1 Tablesp,
Ghee 2 tsp for filling,
For sugar syrup:
Sugar – 125 Gms,
Water – 25 ml,
Rose essence few drops or elachi powder 1/4 tsp,
Method</str:
1).Prepare a little tight dough with maida and ghee along with salt using little water.keep it aside,
2).Thick sugar syrup is prepared with sugar and water.Keep it in warm condition.( a little more than one string ).
3).Fry the nut pieces in a tsp of ghee .Remove and add another spoon of ghee and fry coconut lightly.Mix nuts and coconut and keep it aside.
4).Make thin chapathi and cut it into squqres ( like 5″ into 5″) or pooris.
5).Put a spoonful of filling in each square and fold like an envelope.Secure it with a clove ( Lavang ).
6).Prepare all lavang latha and deep fry them under low medium heat till light golden.
7).Drop the lavang latha in warm syrup .Remove them after 30 seconds and arrange them in a serving plate.
Tip:
You can include mawa in the filing.You can use dessicated coconut in place of fresh one.If you desire you can garnish with saffron stands.f
