Vermicelli Idli

This delicious idli is prepared with semiya / Vermicelli / sevai and semolina.
Ingredients:
Vermicelli – 200 Gms,
Suji / semolina – 50 Gms,
Curds – 4 Tablespoons,
Salt,
Ginger – 1/2″ piece, chopped fine,
Green chilli – 1 chopped fine,
Jeera – 1/2 tsp,
Curry leaves – few, chopped fine,
Chopped coriander – 1 Tablesp,
Mustard seeds – 1/4 Tsp,
Hing – A pinch,
Haldi – A pinch ( optional),
Cashew nuts bits – 2 Tsp,
Oil – 2 Tsp,
Method:
1).Heat oil in a non stick pan, add mustard, jeera, Curry leaves fry till seeds splutter.
2).Add ginger, hing, chilli,haldi and fry for few seconds.
3).Add semiya and rawa.Fry for a minute. Add salt and remove.
4).Cool and add curd and water little by little to make batter of idli consistency.
5).Set aside for 2 hrs to ferment.
6).After 2 hrs add a pinch of baking soda and steam idlis on greased idli plates for 7 to 8 minutes. Serve with chutney and sambar.
