This plantain flower curry is very delicious and healthy with simple procedure.
Ingredients:
Raw banana / plantain flower head – 1,medium size with healthy florets, central stamen removed and florets chopped ,immersed in water till use to avoid discolouration,
Onion – 1,medium, cut into small pieces,
Split mung dal with out skin – 2 tablespoons, soaked for 1/2 hr,
Green chilli – 4, Chopped fine,
Jeera – 1/2 Tsp,
Red chilli powder – 1/2 Tsp,
Haldi – 1/8 Tsp,
Skin less split urad Dal – 1 Tsp,
Channa Dal – 1 Tablespoons, ( optional),
Chopped choriander leaves – 1 Tablespoon,
Peeled garlic Cloves – 6. lightly crushed,
Garam masala – 1/2 Tap,
Chopped ginger – 1/2 Tsp,
Salt,
Oil – 3 Tablespoons,
Curry leaves – A sprig,
Method:
1).Boil chopped banana flower and mung Dal along with haldi and salt till tender. ( Use minimum water). Drain if water is more. Keep it aside.
2).Heat oil in kadai ,add mustard seeds, urad ďàl, jeera, Channa Dal,curry leaves and fry till mustard crackles. Add onion, green chilli, chopped ginger and peeled garlic. Fry till onion turns soft.
3).Add the boiled florets along with chilli powder and mix well. Check salt ,add garam masala and keep it covered for 2 to 3 minutes.stirring once in between.
4).Garnish with coriander leaves and remove. Serve as side dish with rice / chapati/ poori.
Tip:
a).You can use microwave oven to cook florets and mung dal for 6 to 8 min under micro high using very little water.
b).YFor variation you can add Maggi masala magic powder to the curry ( if available ) before removing from fire in place of garam masala.
