Ingredients:
300g – sweet potato
300g – flour
50g – powdered sugar
1&1/2 tsp – baking powder
1 – egg, large
1&1/2tbsp – butter
6 drops – vanilla essence
A pinch of salt
Oil for deep frying
Coating for doughnuts
3 tbsp – powdered suger
1tsp – cinnamon powder
Method:
1.Wash sweet potato thoroughly, boil in water till soft, peel and mash them without any lumps and keep aside.
2.Sift flour along with baking powder and salt.
3.Mash potatoes, powdered sugar and melted butter, mix well and keep aside.
4.Beat egg well and add essence
5.Add beaten egg and flour, mix alternately to potato mix & knead lightly (if the dough is too tight you can add few drops of milk)
6.Divide dough into equal parts & make each into a thick chapathi.
7.Cut out circles of 2 to 2&1/2 inches diameter, make a small hole in the centre,
8.Deep fry doughnuts till light golden brown in colour.
9.Remove and dust them with powdered sugar and cinnamon mix.
