This snack is very easy to prepare and can be served with evening tea.
Ingredients:
Tender cabbage head – 1,Layers are carefully removed with out breaking.Keep them aside,( Select about 10 leaves)
For stuffing –
Potato – 2, medium,washed, boiled, peeled and mashed,
Onion – 1,cut into small pieces,
Green chilli – 2,chopped fine,
Chopped ginger – 1/2 TSP,
Garam masala – 1/4 TSP,
Amchur – a pinch,
Dry fried and crushed ground nuts – 1 Tablesp,(optional),
Salt,
Boiled fresh peas – 1 Tablesp,
Chopped coriander – 2 TSP,
Oil – 2 Tablesp (or less )for preparing stuffing and for shallow frying.
Method:
1).Blanch the cabbage leaves by plunging them into boiling water .Keep them for a minute and remove.Pat dry and keep them aside.
2).Heat 2 tsp of oil and fry onion , chilli ,ginger till onion turns a bit soft.Add masala powders along with salt and mix well .
3).Add potato mash along with peas and blend well .Lastly add chopped coriander,ground nuts and mix well.The stuffing should be dry.
4).Spread the cabbage leaf on wrong side on flat surface.( after removing the hard portion if any) and put a tablesp of stuffing in the centre and fold the leaf like an envelope / fold on four sides and secure with a clove.
5).Arrange the cabbage packets on grill pan / non stick pan.Drizzle oil and shallow fry them on both sides under low fire.Serve this snack with evening tea.
Tip :
Handle the cabbage leaves carefully with out breaking.Change the stuffing for variation.
