Simple potato fry

Ingredients:

300-350g – potato, peeled and cut into 1-1&1/2 inch cubes
2 tbsp – oil
Salt
2 tsp – cumin, crushed roughly
A pinch of asafoetida
A pinch of turmeric powder
10 – curry leaves
1 tsp – pepper powder/red chilli powder
3 – peeled and crushed garlic cloves
2 tsp – chopped coriander leaves

Method:

1.Boil potato in salted water for 3 to 4 min till it is just tender; drain and keep aside.
2.Heat oil, add asafoetida, turmeric powder, curry leaves, crushed garlic cloves and cumin and fry for a min.
3.Add the chopped potato and fry them till crisp and golden brown in colour.
4.Sprinkle red chilli powder/pepper powder, toss and cook on low flame for 1 to 2 min.
5.Sprinkle chopped coriander leaves, stir and remove.
6.Can be served as side dish or as an evening snack with tea.
