These Gujia / karanjias / kajji kayalu ( in Telugu ) are for diabetics and dieters ,using sugar free powder in stuffing.
Ingredients:
Whole wheat flour – 250 Gms,
Fine rawa / suji / semolina – 2 Tablesp,
Salt – A pinch,
Oil – 1 Tablesp for the dough,
For stuffing :
Fried and crushed ground nuts – 3 Tablesp,
Fried Channa dal powder – 3 Tablesp,
Dessicated coconut powder – 3 Tablesp,
Seed less dates -5 to 6,sliced into small bits,
Almond slivers – 2 TSP,
Cardamom powder – 1/2 TSP,
Sugar free powder – 3 TSP,( preferably sucralose ).
Method:
1).Prepare stuffing by mixing all the ingredients and keep it aside.
2).Prepare a little stiff dough with whole wheat flour ,suji,salt and oil.Keep it covered with a damp cloth for 1/2 hr.
3).Devide the dough into goose berry size balls and keep them aside.
4).Prepare thin pooris of 3 to 4″ diameter out of the balls.Put stuffing in the centre and close them to form semi circular gujia using little water to seal the edges.
5).Prepare all gujia and fry them under medium low flame till they turn nice golden in colour.
6).Remove them on a kitchen paper to absorb excess oil if any.
7).Diabetics and dieters can enjoy this sweet but in moderate portions.
Tip:
You can use gujia mould for preparing them.
