This jam is prepared with raw mangoes ,quickly in a pressure cooker
Ingredients:
Healthy raw mango – 2,medium size, Approximately 350 Gms ( Bangalore or Chittoor vareity which contains minimum fibrous content ),
Sugar – 275 Gms,
Cardamom powder – 1/4 TSP,
Desi ghee – 2 Tablesp,
Citric acid – 1/2 TSP,
Method:
1).Wash and grate mango with out peeling.
2).Add sugar and elachi powder to it and mix well with a spoon.Keep it aside.
3).Heat pressure cooker ( preferably 3 litres cooker).Add ghee and mango sugar mix.
4).Immediately close the lid and cook under high flame for 3 Whistles.
5).After steam escapes remove the lid and add citric acid crystals.Mix well.By this time the jam is cooked well and becomes translucent.
6).Initially even if the cooked jam looks a little watery, once it cools down ,it becomes a little thicker than before.
7).Serve this with bread / chapathi / poori.Kids simply love this mildly tangy and sweet spread on breads.
8).Use a dry spoon . It keeps good for 10 to 15 days in fridge.
Tip:
You can increase or decrease the quantity of sugar as per your wish.
