This fibre rich ,tasty broad beans curry is a quick preparation in pressure cooker and within 10 minutes you can have the curry on your plate.
Ingredients:
Broad beans – 250 Gms,
Onion – 1,medium ,chopped fine,
Green chilli – 4 ,chopped fine,
Red chilli – 1,broken into 2,
Jeera – 1/2 Tsp,
Peeled and crushed garlic cloves – 5,
Salt,
Curry patta leaves – 10,
Finely chopped coriander leaves – 2 Tsp,
Freshly grated coconut – 1 Tablesp / 1 Tablesp of fried ground nut powder,
Oil – 1 Tablesp or less,
Haldi – A pinch
Sugar – A pinch,
Method:
1).Wash beans,remove tough fibrous tissue,cut into 1/2 to 3/4″ bits,and keep them aside.
2).Heat oil in 3 litres pressure cooker,add jeera,red chilli and curry leaves.Fry till jeera changes colour.
3).Add onion,chilli and garlic cloves.Fry till onion becomes pink and soft.
4).Add beans,haldi, salt and sugar along with 2 Tablesp of water.Stir well and cook for 3 whistles.
5).Remove the cooker from fire and let the steam escape.Remove the lid ,sprinkle coriander and coconut / fried ground nut powder.
6).Stir well and serve as side dish.
Tip:
Advantage of cooking in pressure cooker is less oil ,less time and less strain for the person who is cooking.But do not leave the kitchen when you are using 2 / 3 litres cookers.
