Amla pickle

Amla pickle is one of the most popular pickles of Andhra Pradesh.It is called Usiri kaya patchadi in Telugu.
Ingredients:
Amla / Usiri kaya( Telugu name) / Goose berry – 350 Gms,
Red chilli powder – 4 Tablesp,
Haldi – 2 Tsp,
Salt – 4 Tablesp,
Methi powder – 2 Tsp,
Mustard powder – 1 Tablesp,
Oil – 150 ml,( preferably til oil ),
Lime juice from 5 limes of medium size,
Peeled garlic cloves – 10 ( optional ),
Method:
1).Wash Amla,dry them with a clean cloth. Give 2 to 3 cuts on them and keep them aside.
2).Heat oil and suite the amla under low heat till they turn tender .Add garlic if you want to add and let it cool completely.
3).Mix all masala powders in a bowl and add this to amla along with lime juice.Mix thoroughly and preserve it in a clean bottle.
4).Serve it after 2 days.
Tip:
Usually this pickle turns black in course of time especially when tamarind is used instead of lime juice.Keep it in fridge if you want to enjoy bright red pickle through out the year.
