This snack is prepared with egg poratu / scramble / bhurji as stuffing.
Ingredients:
For outer covering-
wheat flour – 250 Gms,
Oil – 1 Tablesp,
Salt
For Egg poratu-
Eggs , medium – 6
Onion,medium – 2,cut into small pieces,(squeeze out some of the moisture from onions as the curry should be dry).
Green chilli – 3,chopped fine,
Chopped coriander leaves – 1 Tablesp,
Salt,
Haldi – A pinch,
Chopped ginger – 1/2 Tsp (optional),
Oil – 2 to 3 Tablesp,
Oil for deep frying samosa.
Method:
1).Make a little stiff dough with wheat flour,salt and oil.Keep it aside covered.
2).Heat oil for poratu and fry onion and green chilli (and ginger)till onion becomes pink and soft.
3).Add salt and haldi, mix well.Break eggs one by one over onion mix .Stir quickly and continuosly so that egg blends well with onion.
4).Add finely chopped coriander ,mix well,remove and keep it aside to cool.
5).Knead the prepared dough for a minute and make small round poori (5 to 6″size).Cut each into 2 parts.
6).Make cones and stuff them with egg bhurji.Fry them under low medium hot oil till crispy and light golden in colour.
7).Remove samosa on a kitchen napkin to absorb excess oil if any.
8).Serve this tasty and healthy samosa along with evening tea.
Tip:
Fry the samosa slowly under low medium heat ,other wise they become soggy after some time (as we used wheatflour here).You can combine white flour and wheat flour or use only white flour if you desire.You can use red chilli powder instead of chilli.Reduce the chilli content for kids.
