This recipe is a healthy protein rich item prepared with seasonally available vaal beans. Vaal beans belonging to legume family are very healthy dal with high protein content. One of the best snack item for diabetics also. Actually vaal beans are removed from pods.The outer covering is discorded and the beans are used for curries, gravies, snacks etc
Ingredients:
Vaal beans removed from the pods – 250 gms,
Onion – 1 medium , chopped fine,
Green chilli – 3 to 4 chopped fine,
Grated ginger – 1/4 tsp,
Jeera – 1/4 tsp,
Peeled and crushed garlic cloves – 5,
Red chilli – 1,broken into pieces,
Oil – 1 tablesp,
Curry leaves – few,
Chopped coriander leaves – 2 tsp,
Mustard seeds – 2 pinch,
Urad dal – 2 pinch,
Method
1).Cook the dal with little salt along with 200 ml.of water in pressure cooker for 3 whistles.
2).Cool the cooker , remove the lid and drain the water from dal.
3).Heat oil in the same cooker, add mustard, jeera, crushed garlic, red chilli, curry leaves.Fry till mustard crackles, add onion, green chilli, and fry till onion becomes soft.Add haldi and salt ( if needed ) mix well.
4).Now add cooked beans, stir well, cover cooker and allow to cook for 2 minutes. Remove the lid and sprinkle chopped coriander, mix once and remove cooker from flame.
5).Enjoy this snack along with tea. But have light dinner preferably.
